Chef James Lamprey, who is known for his ‘fun and interesting recipes’, has taken to social media to share a cooking hack that will help you make the perfect cheese toastie every time
When it comes to crafting the perfect cheese toastie, many would instinctively reach for the butter to slather on the outside for that sought-after golden crunch. However, culinary whiz James Lamprey suggests there’s a superior technique.
Taking to TikTok to deliver his wisdom, the chef, lauded for his “fun and interesting recipes” on various platforms, showcased his method for assembling a sublime cheese toastie. His advice was clear: “I’m going to teach you a cooking hack that will help you make grilled cheese sandwiches.
“First, use mayonnaise, not butter, to spread on your bread. This is going to help it cook perfectly without burning the toast. Now this is the simple bit, put the mayo-slathered side against the pan, then layer on the cheese and crown it with the second slice of bread.”
When the time to flip comes round, he swerves the typical spatula flip. Instead, he proposes an ingenious pan-over technique to contact the untoasted side of the sandwich directly with the searing pan.

He elaborated: “When it’s time to flip, you don’t want to do this [flip the sandwich] as it can create a mess. What you’re after is to slip the utensil beneath, secure it, flip the pan over so it settles on the ungrilled surface of the bread, and then gently return it to the heat. By doing so, spills are avoided and your crust turns out immaculate.”
Lamprey’s hack went down a storm on social media. One user endorsed the method, writing: “I’ve been doing this for so long it’s the best way to make a grilled cheese.”
Echoing this sentiment, another remarked: “He knows how to make a grilled cheese.” And a third commenter exclaimed: “The mayo – great tip! I loved it, thanks!”

However, some social media users were sceptical about his unorthodox method of turning the pan upside down instead of flipping the sandwich.
One critic remarked: “Or you could just use two spatulas.” Another chimed in with a different approach: “I found that putting a lid on helps melt the cheese so you can just flip it normally.”
Someone else was dismissive of the technique, adding: “Nobody is putting the pan upside down.” And yet another user pointed out a practical concern: “For the flip tip, all the crumbs will fall onto the stove then.”
